APAS
Our partnership with the APAS cooperative began back in 2018 during a trip through Brazil.
Since then, we’ve built a close relationship – especially with farmers Alessandro and Ademilson, who grow their coffee cherries with great passion and care.
Today, APAS is home to 71 farmers and has become a key part of our long-term, fair sourcing relationships.





Brewing Tips
Apas is perfect for all espresso brewing methods. We especially recommend it for Espresso machines, Moka pots and the AeroPress. Prefer your coffee with milk (or alternatives) or a touch of sugar? Then Apas is a must-try.

Medium and Fresh Roast
Apas is roasted fresh every week at our Berlin roastery. Our expert roasters carefully time the roast to highlight the perfect balance of sweetness, flavor, and body. The roast profile is custom-tailored to every batch – crafted with deep expertise and attention to detail.

Origin and Processing
The APAS cooperative has been delivering outstanding green coffee to us for many years. One of them is Apas – a true showcase of the chocolatey flavor notes Brazil is famous for.
The passionate farmers put great emphasis on careful cherry processing. Right after harvest, the ripe, deep-red cherries are sorted in a water bath – unripe ones float and are removed. The selected cherries then dry for around three weeks on so-called drying beds under the sun. To ensure a consistently sweet and clean cup profile, they’re turned by hand and sorted daily.
Unlike washed processing, the coffee cherry is removed after drying – allowing the green coffee to develop a more intense flavor.
