CREAMY ESPRESSO WITH A FRUITY ACIDITY
The Ademilson is a nutty, chocolaty espresso from Brazil from our long-time friends Ademilson and Alessandro, from the APAS cooperative. In terms of taste, the coffee has notes of almond and cocoa nibs, paired with a fine fruity note that reminds us of cherry and red berries. For a Brazilian coffee, this coffee is complex and multi-layered. Its creamy and soft mouthfeel also makes the Admilson Espresso special.
Tips for preparation
Ademilson is roasted to suit all espresso preparation methods. We recommend it for preparation with the espresso machine, the stovetop pot or the AeroPress. As it is a medium-strong roast, it also works well as a filter coffee variant in the French press. Due to its slightly fruity note, it can also be prepared very well as an iced espresso or cold brew.

We roast the Ademilson fresh and particularly gently every week in our roastery in Berlin. Our master roasters pay close attention to the moment at which the sweetness and aroma of the coffee unfold optimally. The roasting profile is put together individually by our master roasters depending on the characteristics of the coffee.

Herkunft
We got to know the APAS cooperative on our trip through Brazil in 2018. Since then, we have maintained a particularly close and friendly relationship with the farmers Ademilson and Alessandro. They are extremely passionate and live for their coffee. We have been buying the blend coffee from their cooperative for our Yirga Santos espresso every year since 2018. We are also always on the lookout for particularly high-quality micro lots. This is because they pick their cherries by hand on the best sections of their farms (selective picking) and create exceptional micro lots every year. Last year, we selected several smaller lots from our two friends, which we now use to create the wonderful high-end blend „Ademilson“ in our roastery. These micro lots are definitely among our highlights of the last harvest and we hope you will be as enthusiastic as we are. The Yellow and Red Bourbon coffees from Ademilson form the basis for this espresso, which is why we have named our espresso after him.
Ademilson and Alessandro attach great importance to the careful preparation of the cherries. After picking, the ripe red coffee cherries are separated from unripe cherries by floating them in a water bath and then dried on raised drying beds in the sun for around 3 weeks. During this time, the cherries are regularly turned by hand to ensure even drying, with defective cherries being selected by hand.
