Recipes with Ryan: Buttermilk Biscuits with Mushroom Gravy

On today’s meal plan: Buttermilk Biscuits with Mushroom Gravy. Just thinking about it makes my mouth water. Our chef Ryan shares his favorite recipe from his home country the USA with you.

Last year we all spent a lot of time at home. Baking and cooking have been therapeutic for me to get my mind off things. It feels good to follow a recipe and enjoy the moment of success when the food turns out delicious. However, I am starting to run out of ideas. So I asked our Ryan from our Café for some new tips. I’m sharing his favorite recipe with you here.

Buttermilk Biscuits with Mushroom Gravy

The recipe makes ten buttery, crispy, but tender biscuits, which are also very suitable for freezing. We combine the biscuits with Mushroom Gravy, which is very easy to prepare.

For 8 – 12 biscuits you will need:

  • 435 g  Flour (Type 550)
  • 2 tsp. Salt
  • 2.5 tsp. Baking Powder
  • 2 tsp. Sugar
  • 220 g Butter (cold)
  • 240 ml Buttermilk
  • 1 Egg for egg wash

For about a liter of gravy you will need:

  • 65 g Olive oil
  • 1/2 Onion, finely chopped
  • 300 g Finely chopped mushrooms
  • 2 Cloves garlic
  • 65 g Flour (Type 405)
  • 1 – 1.5 l Vegetable stock
  • 1 – 4 tsp. Soy sauce
  • 1 – 3 tsp. White miso
  • 1/2 tsp. Salt
  • 1/4 tsp. Black pepper

Preparation of Buttermilk Biscuits

  1. Preheat oven to 220 °C.
  2. Mix the dry ingredients in a  bowl using a whisk.
  3. Cut butter into cubes, add to flour and work it into the dry ingredients using your hands, pinching the pieces of butter until they are about pea-sized.
  4. Once the butter is incorporated, slowly pour the buttermilk into the mix, mixing with a fork until mostly combined. The dough should be very dry and crumbly.
  5. Slowly pour the buttermilk into the mixture and mix everything with a fork. The dough should be very dry and crumbly.
  6. Shape the dough into a square (about 3 cm high). Cut the square into 4 equal parts and stack them on top of each other. Now, push the dough with your hands down to a 3 cm high rectangle.
  7. Trim the edges and cut the rectangle into 8 – 12 equally sized pieces. (For best experience, each biscuit should be 5 x 5 cm or larger.)
  8. Spread the biscuits with enough space on the baking sheet. Beat the egg and carefully brush the biscuits with the egg mixture.
  9. Put the biscuits in the oven, and reduce to the temperature to 200 °C.
  10. Bake for 20 – 25 minutes until deeply golden brown on the bottom, and golden on top.

Here is how to prepare Mushroom Gravy

  1. Finely chop onion, mushrooms and garlic.
  2. Heat up oil in a large skillet. Add the chopped veggies to oil and cook until well-browned, 8 – 10 minutes.
  3. Add the flour and sweat the mixture until it is all golden brown and slightly clumpy.
  4. Slowly add vegetable stock, whisking until a smooth sauce forms. Let the sauce simmer until the desired consistency is achieved.
  5. Season the sauce with miso, soy sauce, salt and pepper according to your taste.
